Quick and easy apricot and brie appetizers wrapped in flaky phyllo dough.
Ingredients:
  • 6 sheets frozen phyllo (filo) pastry (17x12 inch), thawed
  • Cooking spray
  • 24 pieces (1x1x1/2-inch pieces) brie cheese (about 4 oz)
  • 1/2 cup apple butter or apricot preserves
  • 1/3 cup chopped pecans, toasted
  • Fresh chives, if desired
Instructions:
  • Preheat your oven to 350°F. Spread out the phyllo sheets and cover them with plastic wrap or a towel. Put one phyllo sheet on your work surface and spray it with cooking spray. Layer two more phyllo sheets on top, spraying each one with cooking spray. Use a sharp knife to cut through all the layers to create 12 squares.
  • Place a piece of cheese, a teaspoon of apple butter, and half a teaspoon of pecans on each square. Repeat with the remaining 3 phyllo sheets and ingredients. Bring the corners together towards the middle and twist.
  • Bake for 17 to 18 minutes until beautifully golden brown, then delicately tie a chive around each bundle before serving warm.
