Indulge in a unique quick bread bursting with dates, figs, and walnuts. Perfect with creamy cream cheese.
Ingredients:
  • 0.5 cup chopped walnuts
  • 1 cup dates, pitted and chopped
  • 1 cup chopped dried figs
  • 0.25 cup unsalted butter, softened
  • 1.5 teaspoons baking soda
  • 1 cup boiling water
  • 2 large eggs, room temperature
  • 0.75 cup all-purpose flour
  • 0.75 cup whole wheat flour
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) while you generously grease an 8x4-inch loaf pan.
  • Arrange the walnuts in a single layer on a baking sheet.
  • Toast the ingredients in the preheated oven for 5 to 10 minutes until fragrant. Allow them to cool before using.
  • Combine dates, figs, butter, and baking soda in a bowl. Pour hot water over the mixture and allow the figs to slightly rehydrate for 15 to 20 minutes.
  • Combine sugar, walnuts, and eggs with the date mixture. In another bowl, whisk all-purpose flour, whole wheat flour, salt, and baking soda together. Gently fold the flour mixture into the date mixture until just combined. Transfer the batter into the prepared loaf pan.
  • Bake in the oven until a toothpick inserted into the center comes out clean, for about 55 to 65 minutes. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
