Easy Focaccia

Cheesy Parmesan and fragrant rosemary elevate this bread to gourmet status.
Ingredients:
  • 1.5 cups bread flour
  • 1.5 cups unbleached all-purpose flour
  • 2 teaspoons salt
  • 1 tablespoon white sugar
  • 1 (.25 ounce) package instant yeast
  • 1.3333300352097 cups warm water (110 degrees F/45 degrees C)
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • In a large stoneware bowl, combine both flours and salt. Create a well in the center and add sugar and yeast. Slowly pour in the water. Allow the yeast to activate for about 5 minutes.
  • Drizzle 2 tablespoons of oil into the well. Stir the center of the mixture with a wooden spoon, gradually incorporating all the flour by widening your stirring motion.
  • Transfer the dough onto a floured surface and gently knead until it becomes smooth while ensuring it remains soft.
  • Drizzle 1/2 teaspoon of oil into a fresh bowl. Add the dough, rotating it to coat the top with oil. Cover and allow to double in size for 30 to 45 minutes.
  • Coat the baking sheet with a drizzle of oil.
  • Deflate the dough by punching it down, then transfer it to the baking sheet and gently press it out to a thickness of about 1/2 inch.
  • Drizzle the remaining 1 1/2 teaspoons of oil over the dough. Gently press the handle end of a wooden spoon into the dough at 1 1/2-inch intervals. Sprinkle with fragrant rosemary and flavorful Parmesan cheese. Slide it into a cold oven on the center shelf with a pan of hot water on the shelf below for a steamy rise until doubled, about 20 to 25 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Bake the focaccia until golden brown on top for 20 to 25 minutes. Transfer to a wire rack to cool and serve warm.
