Easy Fresh Blueberry Cobbler

Versatile deep-dish cobbler, customizable with your favorite fruit.
Ingredients:
  • 4 cups blueberries
  • 0.5 cup white sugar
  • 0.5 lemon, juiced
  • water, to cover
  • 1 teaspoon cornstarch, or more as needed
  • 0.25 cup cold water
  • 1 cup milk
  • 1 cup self-rising flour
  • 1 cup white sugar
  • 0.25 teaspoon vanilla extract, or to taste
  • 0.25 cup melted butter, or to taste
  • 1 pinch ground cinnamon, or to taste
  • 1 teaspoon coarse sugar, for garnish
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a saucepan, mix blueberries with 1/2 cup sugar and lemon juice, adding just enough water to cover. Bring to a boil. Cook on medium-high heat, stirring occasionally, until the berries pop and sugar dissolves, about 3 to 5 minutes. Combine cornstarch with 1/4 cup cold water, then stir into the blueberry mix. Cook until it slightly thickens, about 5 minutes more. The mixture will thicken as it cools.
  • Combine milk, flour, 1 cup sugar, egg, and vanilla extract in a bowl and whisk until silky smooth.
  • Coat the bottom of an 8-inch square deep baking dish with melted butter. Pour batter over the butter, sprinkle with cinnamon, and top with the berries mixture.
  • Bake in a preheated oven for around 30 minutes until the batter is fully cooked. Sprinkle coarse sugar over the cobbler and allow it to cool for 15 minutes before serving.
