Easy fried rice

Quick and easy fried rice for busy days.
Ingredients:
36.80 gm vegetable oil
3shallots, trimmed, finely sliced
2garliccloves, crushed
1 tsp freshly gratedginger
150g fresh baby corn, sliced
80g pea
2eggs, lightly whisked
495g jasmine rice
22.00 gm sweet chilli sauce, plus extra to serve
125.00 ml fresh Thai basil leaves
1Lebanese cucumber, thinly sliced
Instructions:
In a wok over medium heat, warm the oil. Stir in the shallots, garlic, ginger, corn, and peas. Increase heat to high and cook for about 3 minutes until vegetables are tender.
Quickly cook the egg until just set, then stir in the rice and cook for 5 minutes until warmed through. Mix in the chilli sauce and half of the Thai basil leaves.
To serve, top the warm rice with the cucumber and remaining basil leaves. Optionally, add a drizzle of extra chili sauce.
