Quick and easy fried rice for busy days.
Ingredients:
  • 36.80 gm vegetable oil
  • 3 shallots, trimmed, finely sliced
  • 2 garlic cloves, crushed
  • 1 tsp freshly grated ginger
  • 150g fresh baby corn, sliced
  • 80g pea
  • 2 eggs, lightly whisked
  • 495g jasmine rice
  • 22.00 gm sweet chilli sauce, plus extra to serve
  • 125.00 ml fresh Thai basil leaves
  • 1 Lebanese cucumber, thinly sliced
Instructions:
  • In a wok over medium heat, warm the oil. Stir in the shallots, garlic, ginger, corn, and peas. Increase heat to high and cook for about 3 minutes until vegetables are tender.
  • Quickly cook the egg until just set, then stir in the rice and cook for 5 minutes until warmed through. Mix in the chilli sauce and half of the Thai basil leaves.
  • To serve, top the warm rice with the cucumber and remaining basil leaves. Optionally, add a drizzle of extra chili sauce.
