Quick and easy fried rice with leftover rice, peas, eggs, soy sauce, and carrots. Perfect as a side or main dish.
Ingredients:
  • 0.66666668653488 cup chopped baby carrots
  • 0.5 cup frozen green peas
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced, or to taste
  • 2 large eggs
  • 3 cups leftover cooked white rice
  • 1 tablespoon soy sauce, or more to taste
  • 2 teaspoons sesame oil, or to taste
Instructions:
  • Gather your ingredients.
  • In a small saucepan, simmer the carrots in water until tender, about 3 to 5 minutes. Add peas, then drain in a colander.
  • 1. Preheat a wok over high heat. Pour in a generous amount of vegetable oil, then toss in the vibrant carrots, peas, and aromatic garlic; sauté for roughly 30 seconds. Incorporate the eggs swiftly, stirring to create delightful scrambled eggs mixed with the colorful vegetables.
