Cheesy Cheddar and tomato-filled meat loaf with flavorful bell peppers and onions.
Ingredients:
  • 2.5 pounds ground beef
  • 0.5 cup Italian seasoned bread crumbs
  • 1 teaspoon fresh cracked black pepper
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 Spanish sweet onion, chopped
  • 1 (16 ounce) package shredded Cheddar cheese, divided
  • 1 (8 ounce) can tomato sauce, divided
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Combine ground beef, eggs, bread crumbs, salt, and black pepper in a large bowl. Blend in green, red, and yellow bell peppers along with onion. Transfer the mixture into a 13x9-inch glass baking dish.
  • Create a well in the center of the beef mixture. Fill the well with 3/4 of the Cheddar cheese and half of the tomato sauce. Encase the cheese and sauce filling with the beef mixture to shape a loaf, ensuring it's sealed by pinching the edges. Lightly cover the meatloaf with aluminum foil.
  • After baking the meatloaf for 45 minutes, uncover and add more Cheddar cheese and tomato sauce on top. Return to the oven and bake for an additional 15 minutes until cheese is melted. Let the meatloaf rest for 10 to 15 minutes before slicing and serving.
