Introducing Aloo Tikki: Spiced mashed potato cakes - a delicious twist on a traditional favorite!
Ingredients:
  • 1 1/3 cups water
  • 1 tablespoon butter
  • 1/3 cup milk
  • 1 cup Betty Crocker™ Mashed Potatoes
  • 1 1/2 teaspoons garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch
  • 3/4 cup frozen sweet peas, cooked, cooled
  • 2 tablespoons finely chopped cilantro
  • 1 tablespoon finely chopped jalapeño chile
  • 1/2 cup plain yogurt
  • 3 tablespoons vegetable oil
  • 6 small sprigs cilantro, if desired
Instructions:
  • In a 2-quart saucepan, bring water and butter to a boil. Take off heat and mix in milk and potatoes until just moistened. Allow to sit for about 30 seconds for liquid to be absorbed. Use a fork to beat until smooth. Transfer to a medium bowl and let cool for 10 minutes.
  • Season potatoes with a flavorful blend of garam masala, chili powder, coriander, cumin, ginger, and salt. Stir well. Sprinkle evenly with cornstarch and mix. Add peas, 1 tablespoon of cilantro, and jalapeño. Combine thoroughly. In a separate bowl, stir remaining cilantro into yogurt and set aside.
  • Shape the potato mixture into 12 evenly-sized balls, then delicately press each ball into a 1 1/2-inch patty that is 1/2 inch thick.
  • Heat oil in a 10-inch nonstick skillet over medium heat. Cook patties in batches for about 5 minutes, flipping once, until browned on both sides and heated through. Transfer to a paper towel-lined plate and repeat with remaining patties.
  • Top with a creamy dollop of yogurt mixture and garnish with fresh cilantro sprigs before serving.
