Savory sausage, pasta, marinara sauce, and a blend of cheeses combine effortlessly for a quick and satisfying Italian meal.
Ingredients:
  • 1 (8 ounce) package rigatoni pasta
  • 1 pound bulk Italian sausage
  • 0.25 cup diced onion
  • 4 cups spaghetti sauce
  • 2 cups cottage cheese
  • 2 cups mozzarella cheese, divided
  • 0.25 cup freshly grated Parmesan cheese
  • 2 large eggs, beaten
  • 1 tablespoon dried parsley
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon dried basil
Instructions:
  • Bring a large pot of salted water to a boil. Cook rigatoni until al dente, about 12 minutes. Drain and set aside.
  • Preheat your oven to 350 degrees F (175 degrees C) while you prepare a large baking dish by greasing it.
  • Sear sausage and onion in a large skillet until sausage is fully cooked and onions are soft, 5 to 7 minutes.
  • In a large bowl, mix together spaghetti sauce, cottage cheese, 1 cup of mozzarella cheese, Parmesan cheese, eggs, parsley, Italian seasoning, basil, salt, and pepper. Stir in the cooked sausage and onion mixture until fully combined. Gently fold in the pasta until evenly coated. Transfer the mixture to the baking dish and cover it.
  • Bake in the preheated oven for 45 minutes. Then, top with the remaining mozzarella and bake uncovered until the cheese is melted, approximately 15 minutes.
