Whip up a tasty chicken salad with fruit, nuts, and zesty dressing, served on a bed of fresh greens.
Ingredients:
  • 8 ounces shredded rotisserie chicken
  • 0.5 cup chopped pecans
  • 1 apple, cored and chopped
  • 10 seedless green grapes, quartered
  • 1 cup mayonnaise
  • 1 tablespoon low-fat vanilla yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 0.25 teaspoon ground cumin
  • salt and ground black pepper to taste
Instructions:
  • Combine shredded chicken, crunchy pecans, crisp apple, and juicy quartered grapes in a bowl. Gently mix all ingredients together until well combined.
  • Combine mayonnaise, yogurt, mustard, lemon juice, cumin, salt, and pepper in a small bowl. Drizzle over chicken and toss gently until well-coated. Chill covered in the refrigerator for about 1 hour before serving.
