Luscious lemon-glazed cake with a perfect balance of zesty citrus and creamy curd.
Ingredients:
  • 5 ounces self-rising flour
  • 4 ounces white sugar
  • 1 stick unsalted butter
  • 2 eggs, beaten
  • 2 tablespoons lemon curd (heaped tablespoons)
  • 2 tablespoons lemon juice
  • 2 tablespoons superfine sugar
  • 1 tablespoon lemon zest
Instructions:
  • 1. Preheat the oven to 350 degrees F (175 degrees C) and line a loaf pan with parchment paper.
  • In a bowl or food processor, mix together flour, sugar, butter, eggs, and lemon curd until well combined. Transfer the mixture to the prepared pan.
  • Bake in the center of the preheated oven for 60-90 minutes or until a toothpick inserted in the center comes out clean.
  • Combine freshly squeezed lemon juice, granulated white sugar, and finely grated lemon zest in a bowl as the cake bakes in the oven.
  • Allow the cake to cool in the pan for 2 to 3 minutes. Next, pour the lemon-sugar topping over the warm cake to soak. Let it cool for about 30 minutes before turning it out of the pan.
