Lemon-Raspberry Crumb Bars

Easy lemon raspberry crumb bars: lemon curd filling, raspberry chip crust, topped with raspberry sauce.
Ingredients:
  • 0.5 cup unsalted butter, melted
  • 0.5 cup white sugar
  • 0.5 cup light brown sugar
  • 1.5 cups all-purpose flour
  • 0.66666668653488 cup raspberry baking chips
  • 0.5 teaspoon salt
  • 1 (10 ounce) jar lemon curd
  • 0.5 cup raspberry preserves
  • 2 tablespoons raspberry liqueur
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease an 8x8-inch baking pan.
  • Combine melted butter, white sugar, and light brown sugar until smooth. Mix in flour to create a crumbly texture. Reserve 3/4 cup of the mixture for the topping. Stir in raspberry baking chips and salt to the remaining mixture.
  • Spread the raspberry crumb mixture evenly into the pan. Press it down with a spoon to create a smooth crust. Top the crust with lemon curd and sprinkle the reserved crumbs on top.
  • After baking in the preheated oven for 35 to 40 minutes, allow the bars to cool in the pan for 20 minutes, then chill in the refrigerator until set, approximately 1 hour.
  • Once the bars are cooling, prepare the raspberry sauce. Microwave raspberry preserves in a microwave-safe bowl for about 40 seconds until easily stirred. Add raspberry liqueur, mix well, and refrigerate until cold.
  • Cut the bars into 9 pieces and elegantly drizzle with luscious raspberry sauce.
