Tangy lemon and raspberry crumb bars with oatmeal crust - irresistible!
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tablespoon lemon zest
  • 0.5 teaspoon baking powder
  • 0.75 cup butter, melted
  • 0.25 cup white sugar
  • 1.5 tablespoons all-purpose flour
  • 2 cups fresh raspberries
  • 2 tablespoons lemon juice
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), and grease an 8x8-inch baking dish.
  • In a bowl, mix flour, oats, brown sugar, sugar, lemon zest, and baking powder. Add melted butter and use your hands to combine thoroughly. Press half of the mixture into the baking dish to create a crust.
  • In a bowl, combine sugar and flour. Gently massage in lemon zest to infuse aromatic flavors. Add fresh raspberries and a splash of lemon juice. Mix until each raspberry is delicately coated. Spread over the crust and generously sprinkle the remaining crumble on top of the raspberries.
  • Bake for 40-45 minutes until the raspberry mixture is firmly set. Allow to cool completely on a wire rack before cutting into 9 squares.
