Lemon Raspberry Crumb Bars

Tangy lemon-raspberry crumb bars: a zesty, easy dessert anytime.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.33333334326744 cup powdered sugar
  • 0.5 teaspoon salt, divided
  • 0.75 cup unsalted butter, cut into 1/2-inch cubes
  • 1 cup white sugar
  • 2 large eggs, at room temperature
  • 0.25 cup lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons all-purpose flour
  • 0.25 teaspoon baking powder
  • 6 ounces fresh raspberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 9-inch square pan with parchment paper, leaving an overhang on all sides.
  • In a large bowl, blend 1 1/2 cups of flour, powdered sugar, and 1/4 teaspoon of salt until mixed. Add butter and mix until the mixture looks like coarse crumbs. Reserve 1/2 cup of crumbs for topping. Press the rest firmly into the pan.
  • Place the crust in the oven that has been preheated and bake for 10 minutes.
  • As the crust bakes, make the filling: Combine white sugar, eggs, lemon juice, lemon zest, 2 tablespoons flour, baking powder, and remaining 1/4 teaspoon salt in a large bowl until mixed thoroughly.
  • Take the crust out of the oven and evenly scatter the raspberries on top. Pour the filling over the raspberries, then randomly sprinkle the reserved 1/2 cup crumb mixture over the top.
  • Return the pan to the oven and bake for 20 to 25 minutes until the bars are firm. Let the bars cool in the pan for 30 to 45 minutes until completely cooled. Use the parchment overhang to lift the bars out of the pan and slice into 9 bars.
