"Meat-free, cheesy pasta delight."
Ingredients:
  • 2 cups ricotta cheese or small curd creamed cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh oregano leaves or 1 1/2 teaspoons dried oregano leaves
  • 2 jars (28 ounces each) tomato pasta sauce (any variety)
  • 12 uncooked lasagna noodles
  • 2 cups shredded mozzarella cheese (8 ounces)
  • 1/4 cup grated Parmesan cheese
  • Additional shredded mozzarella cheese, if desired
Instructions:
  • Preheat the oven to 350°F and combine ricotta cheese, 1/2 cup of Parmesan cheese, parsley, and oregano.
  • Begin by evenly layering 2 cups of the pasta sauce in a 13x9x2 inch ungreased rectangular pan. Next, place 4 uncooked noodles on top of the sauce. Proceed by spreading the ricotta cheese mixture over the noodles. Follow this with another layer of 2 cups of pasta sauce and 4 noodles. Repeat this step once more with sauce and noodles. Sprinkle 2 cups of mozzarella cheese on top. Finish by spreading the remaining pasta sauce and sprinkling 1/4 cup of Parmesan cheese over the dish.
  • Start by baking covered for 30 minutes, then uncover and bake for an additional 30 minutes until hot and bubbly. Add a sprinkle of extra mozzarella cheese and allow it to stand for 15 minutes before cutting.
