Easy Mediterranean Pasta

Mediterranean-Middle Eastern fusion dish, perfect for summer nights, quick and simple to make.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 4 roma (plum) tomatoes, diced
  • 1 small green bell pepper, diced
  • 1 (14.5 ounce) can fava beans, drained
  • 1 small onion, diced
  • 0.25 cup lemon juice
  • 0.5 cup grated halloumi cheese
  • 0.25 cup sliced almonds
Instructions:
  • 1. Boil a generous amount of lightly salted water in a large pot. Add the pasta and wait for the water to boil again. Mix in the olive oil and garlic with the pasta and water. Cook for about 11 minutes until al dente. Drain the pasta and then return it to the pot over medium-low heat.
  • Combine the tomatoes, bell pepper, fava beans, onion, and lemon juice with the pasta. Let it simmer for 7 to 8 minutes until hot and flavors blend. Finish by topping it off with halloumi cheese and sliced almonds before serving.
