Easy Moroccan Chicken Tagine

Delicious Moroccan chicken stew with veggies, chickpeas, and spices - a crowd favorite!
Ingredients:
  • 1 tablespoon olive oil
  • 2 skinless, boneless chicken breast halves - cut into chunks
  • 0.5 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 small butternut squash, peeled and chopped
  • 1 (15.5 ounce) can chickpeas, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (14 ounce) can vegetable broth
  • 1 medium carrot, peeled and chopped
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 1 pinch cayenne pepper
Instructions:
  • In a large skillet over medium heat, sauté chicken, onion, and garlic in oil until chicken is browned and onion is translucent, about 15 minutes.
  • Combine squash, chickpeas, undrained tomatoes, broth, carrot, sugar, lemon juice, salt, coriander, and cayenne pepper in the skillet. Bring to a boil, then simmer on low for 30 minutes until vegetables are tender.
