Indulge in this classic Pasta alla Norma - a comforting Italian dish combining pasta with flavorful eggplant, ideal for a delightful weeknight meal.
Ingredients:
  • 2 tablespoons salt
  • 0.25 cup olive oil, plus extra for drizzling
  • 4 cloves garlic, minced
  • 3 small eggplant, sliced
  • 1 (28 ounce) can whole peeled tomatoes
  • 2 sprigs fresh basil, plus more for garnish
  • 1 sprig fresh thyme
  • 1.5 teaspoons sea salt, or more to taste
  • 1 teaspoon freshly ground black pepper
  • 1 (16 ounce) package spaghetti
  • 1 pinch red pepper flakes, or to taste
  • 0.25 cup freshly grated Parmesan cheese
Instructions:
  • In a large skillet, heat olive oil over medium-high heat until smoking. Sauté garlic and eggplant until softened and lightly browned, about 8 to 10 minutes. Add tomatoes, basil, and thyme and bring to a boil. Reduce heat and simmer for 15 minutes. Season with sea salt and pepper to taste.
  • While you're waiting, boil a generous amount of water and season with 2 tablespoons of salt. Cook the spaghetti until al dente, approximately 12 minutes, stirring occasionally. Drain thoroughly before adding the hot pasta to the skillet with the eggplant mixture. Mix everything together well.
  • Finish by elegantly placing fresh basil leaves and a sprinkle of red pepper flakes. Enhance with a drizzle of high-quality olive oil and generously top with savory Parmesan cheese before serving.
