30-minute creamy tomato vodka shrimp pasta: rich and delicious!
Ingredients:
  • 12 ounces fettuccine pasta
  • Salt
  • 1 1/2 cups finely chopped onion
  • 4 cloves garlic, minced, about 4 teaspoons
  • 1/4 teaspoon red pepper flakes
  • 1 28-ounce can crushed tomatoes
  • 1/4 cup vodka
  • 6 tablespoons heavy whipping cream
  • 1 teaspoon lemon zest
  • 1 pound peeled, deveined raw shrimp
  • 3 tablespoons chopped fresh parsley
  • Freshly ground black pepper
Instructions:
  • Boil pasta water: In a large pot, bring salted water (1 Tbsp salt for every 2 quarts of water) to a boil for the pasta.
  • In a large, heavy-bottomed pot over medium-high heat, melt butter. Cook onions until lightly browned, about 5 to 7 minutes. Reduce heat to medium, add garlic and red pepper flakes, and cook for an additional minute.
  • Pour in the crushed tomatoes over the onions and gently mix. Incorporate the vodka, cream, and lemon zest. Raise the heat until it simmers, then reduce to maintain a gentle simmer.
  • Cook the pasta in boiling salted water once the sauce starts simmering. The pasta should be ready in 10 minutes.
  • Add the raw peeled and deveined shrimp to the simmering sauce and cook until just cooked through. This should take about 5 minutes. Taste for salt and adjust seasoning as needed.
  • Combine cooked al dente pasta with vodka tomato sauce and shrimp. Garnish with parsley and freshly ground black pepper before serving. Enjoy!
