Elevate shrimp pasta salad with zesty dill, fresh lemon, and colorful veggies for a vibrant and crowd-pleasing event dish.
Ingredients:
  • 1 teaspoon olive oil
  • 12 uncooked medium shrimp
  • 1 cup ditalini pasta
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 0.25 cup frozen peas, thawed and drained
  • 1 stalk celery, thinly sliced on the diagonal
  • 2 tablespoons diced red onion
  • 0.5 tablespoon lemon juice
  • 1 teaspoon dried dill weed
  • 1 pinch white sugar
  • salt and ground black pepper to taste
Instructions:
  • In a sizzling cast iron skillet, sear the shrimp until vibrant pink on the outside and the flesh turns opaque, which takes around 5 minutes. Plunge the shrimp into a refreshing bowl of cold water to cool for at least 10 minutes.
  • While waiting, heat a large pot of salted water until it boils gently. Add the pasta and cook, stirring occasionally, until it is cooked but still slightly firm, for about 10 to 11 minutes.
  • Peel and devein the shrimp, then drain the pasta and place it in a large bowl.
  • Combine shrimp, mayonnaise, sour cream, peas, celery, red onion, lemon juice, dill, sugar, salt, and pepper in a bowl. Taste and adjust seasonings as needed. Refrigerate for a minimum of 2 hours before serving.
