Family-friendly creamy lemon shrimp pasta salad for a delicious weeknight dinner.
Ingredients:
  • 0.25 cup Greek yogurt
  • 0.25 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons minced garlic
  • 1 teaspoon ground black pepper
  • 10 ounces penne pasta
  • 40 medium shrimp, or more to taste
  • 2 tablespoons olive oil, or more to taste
  • 0.5 cup chopped scallions (green onions)
  • 1 teaspoon kosher salt
  • 0.5 cup shredded Cheddar cheese
  • 0.5 lemon, thinly sliced
Instructions:
  • Combine yogurt, chicken broth, lemon juice, Dijon mustard, garlic, and 1 teaspoon black pepper in a bowl and whisk until the dressing is smooth.
  • In a large pot, bring lightly salted water to a boil. Add penne pasta and cook for about 8 minutes, stirring occasionally, until al dente. Drain the pasta and rinse with cold water until slightly cooled.
  • Preheat the oven to 450°F (230°C) for a perfect bake.
  • Coat shrimp in 2 tablespoons of olive oil and season generously with salt and pepper before transferring to a glass baking dish.
  • Cook the shrimp in the preheated oven until they turn bright pink and are fully cooked, which should take 10 to 12 minutes.
  • Combine pasta with aromatic dressing in a large bowl. Introduce succulent shrimp and fresh scallions; season generously with 1 teaspoon kosher salt and a touch more pepper. Sprinkle delectable Cheddar cheese and adorn with zesty lemon slices to complete the pasta salad.
