Flavorful shrimp pasta with quick lemon butter sauce - a winning choice for dinner in just 30 minutes!
Ingredients:
  • 0.5 (16 ounce) package angel hair pasta
  • 1.5 medium lemons
  • 1 cup chicken stock, or more as needed
  • 2 tablespoons salted butter, divided
  • 1 pound uncooked shrimp, shelled and deveined
  • 1 teaspoon dried parsley, or to taste
  • salt and ground black pepper to taste
  • 2 medium tomatoes, cubed
  • 1 cup shredded Parmesan cheese, or more to taste
Instructions:
  • Bring a large pot of salted water to a boil. Cook angel hair pasta until al dente, about 4 to 5 minutes, stirring occasionally.
  • Slice the entire lemon into circles, then halve the circles. Juice the remaining half lemon and keep it aside.
  • Heat a skillet over medium-high heat. Pour in chicken stock to cover the bottom. Drop in 1 tablespoon of butter along with shrimp and lemon slices. Sprinkle parsley, salt, and pepper over the shrimp. Cook until the shrimp turn bright pink on the outside and the meat is opaque, approximately 4 minutes. Turn off the heat, toss in tomatoes, and cover with a lid to soften them with the residual heat.
  • After draining the pasta, place it back in the pan. Mix in the shrimp and tomato mixture. Feel free to remove the lemon slices and squeeze out the juice, or leave them in for added flavor.
  • Pour in additional chicken stock to fully coat the skillet. Include 1 tablespoon of butter, extra parsley, and the saved lemon juice. Allow the butter to melt and the mixture to simmer. Next, pour the sauce over the pasta. Add Parmesan cheese and stir until well blended.
