30-minute shrimp pasta with zesty lemon and fresh basil: perfect for a quick and delicious weeknight meal.
Ingredients:
  • 4 ounces spaghetti
  • 1 lemon, zested; zest cut into thin slivers
  • 10 uncooked medium shrimp, peeled and deveined
  • 1 clove garlic, minced
  • salt and freshly ground black pepper to taste
  • 0.25 cup chopped fresh basil
Instructions:
  • 1. Bring a large pot of salted water to a vigorous boil. 2. Add the spaghetti to the boiling water, stirring occasionally, and cook for about 12 minutes until al dente.
  • As the spaghetti cooks, gently warm olive oil in a large skillet. Sauté lemon zest in the fragrant oil for 5 minutes. Filter the infused oil through a sieve back into the skillet. Introduce shrimp and garlic. Simmer in the citrusy oil until shrimp is pink and opaque, around 3 minutes. Season with salt and pepper to taste.
  • After cooking spaghetti, save 1/2 cup of the cooking water. Combine drained spaghetti, reserved water, and basil with the shrimp in the skillet, stirring well. Serve while hot.
