Whip up a flavorful olive oil dressing to complement this refreshing shrimp and pasta dish, packed with vibrant summer vegetables such as zucchini and yellow squash.
Ingredients:
  • 1 (8 ounce) package spaghetti
  • 0.25 cup olive oil, divided
  • 1 (10 ounce) package fresh spinach
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 2 tablespoons pine nuts, or to taste
  • 2 teaspoons minced garlic
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 4 teaspoons lemon juice, divided
  • 2 teaspoons chopped fresh parsley
Instructions:
  • Bring a large pot of salted water to a lively boil. Add spaghetti and cook, stirring occasionally, until it's al dente, about 12 minutes. Drain the spaghetti and return it to the pot.
  • In a skillet over medium heat, sauté spinach, zucchini, squash, pine nuts, and garlic in 1 tablespoon of olive oil until vegetables are tender, about 5-7 minutes. Transfer to a bowl.
  • In the same skillet over medium heat, sauté shrimp with 2 teaspoons of lemon juice in another tablespoon of olive oil until shrimp turn bright pink and opaque in the center, about 5 minutes. Remove from heat.
  • In a bowl, mix together the remaining olive oil, lemon juice, parsley, and red pepper flakes. Season with salt and pepper.
  • Combine the vegetable mixture, shrimp, and olive oil with the spaghetti, stirring until fully mixed.
