Spaghetti Diablo with Shrimp

Spicy shrimp spaghetti served in zesty tomato sauce.
Ingredients:
  • 1 teaspoon olive oil
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 (14.5 ounce) cans no-salt-added diced tomatoes
  • 0.5 cup white wine
  • 0.5 cup chopped fresh parsley, divided
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 8 ounces whole-wheat spaghetti
  • 12 ounces cooked shrimp
  • 0.5 cup grated Pecorino-Romano cheese, or to taste
Instructions:
  • In a Dutch oven, heat oil over medium-high heat. Sauté green and yellow bell peppers, onion, and garlic until tender, about 5-7 minutes. Season with salt and pepper.
  • Combine tomatoes, wine, 1/4 cup parsley, basil, oregano, and red pepper flakes with the bell pepper mixture. Bring to a boil, then simmer covered on low heat, stirring occasionally, until tomatoes break down, for about 2 hours.
  • 1. Bring a large pot of salted water to a vigorous boil. 2. Cook spaghetti until just al dente, approximately 10 minutes; then drain well.
  • Toss the drained pasta and cooked shrimp with the tomato sauce. Cook for another 2 to 3 minutes until the pasta is al dente. Garnish with the remaining parsley and Pecorino-Romano cheese before serving.
