Timeless Italian spaghetti with just 4 ingredients, infused with garlic and chile olive oil - quick and easy.
Ingredients:
  • 1 teaspoon kosher salt, plus more for the pasta water
  • 1 pound dried spaghetti
  • 1/3 cup extra-virgin olive oil
  • 4 large cloves garlic, peeled and very thinly sliced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup finely grated Parmesan cheese, plus more to pass at the table
  • 2 tablespoons finely chopped Italian parsley (optional)
Instructions:
  • Prepare the pasta: In a large, sturdy pot, season water generously with about 2 tablespoons of salt to mimic the taste of seawater. Bring the water to a boil, then add the spaghetti and cook it until it's just almost al dente - slightly undercooked. Remember to reserve 1 cup of pasta water before draining the spaghetti in a colander.
  • - Heat olive oil in the pot over medium heat until it sizzles lightly when a sliver of garlic is added. Then, add the garlic and red pepper flakes, and sauté while stirring constantly until the garlic turns slightly golden, approximately 2 minutes. Be careful not to let it brown.
  • Mix pasta and cooking water in pot, simmer. Add pasta, stir till sizzling. After liquid absorbed, remove from heat. Season with salt, Parmesan. Adjust salt if needed. Serve in bowl or pot, parsley on top. Serve with extra Parmesan. Share your rating!
