Spaghetti aglio, olio & spring greens

Aglio e Olio pasta with fresh garlic, quality olive oil, and Parmesan cheese - simple and delicious!
Ingredients:
  • Parmesan cheese
  • 2 cloves of garlic
  • 1 fresh red chilli
  • 1 head of spring greens
  • 400 g dried spaghetti
  • extra virgin olive oil
  • 1 large unwaxed lemon
Instructions:
  • Peel and finely chop the garlic, deseed and finely chop the chilli, and rinse and finely slice the spring greens. Cook spaghetti according to package instructions for about 8 minutes. Heat oil in a pan, add garlic and chilli, cook until garlic starts to color. Add spring greens, cook for 3-4 minutes until wilted slightly. Grate lemon zest over greens. Drain pasta, add to pan with a splash of cooking water. Squeeze lemon juice, serve topped with oil and grated Parmesan.
