Shrimp and Pasta with Mushrooms

Delicious and elegant shrimp and shiitake mushroom spaghetti in a light white sauce ready in 25 minutes.
Ingredients:
  • 1 package (16 oz) spaghetti
  • 3 tablespoons butter
  • 1 clove garlic, finely chopped
  • 1/4 teaspoon crushed red pepper flakes
  • 4 oz shiitake mushrooms, sliced
  • 1 lb uncooked large shrimp, peeled, deveined
  • 1 to 1 1/2 cups dry white wine (such as Sauvignon Blanc)
  • Salt to taste
  • 3 tablespoons chopped fresh parsley
Instructions:
  • Prepare spaghetti according to package instructions and drain.
  • In a large skillet over medium heat, melt 1 tablespoon of butter. Sauté garlic and pepper flakes for 1 minute, stirring constantly. Add mushrooms and cook for 3 to 4 minutes until lightly browned. Incorporate shrimp and cook for about 4 minutes until shrimp are almost pink. Pour in wine and remaining 2 tablespoons of butter, heat until simmering.
  • Toss cooked spaghetti into the skillet with the shrimp mixture. Season with salt and cook for 1 more minute until shrimp turn pink. Finish by sprinkling parsley on top.
