Creamy shrimp pasta with mushrooms and fettuccine in a rich mozzarella cheese sauce - perfect for a quick weeknight dinner.
Ingredients:
  • 2 tablespoons olive oil
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 3 cloves garlic, finely chopped
  • 1 pinch salt to taste
  • 1 pinch dried basil, or to taste
  • 1 pinch paprika, or to taste
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 cup half-and-half
  • 0.75 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 (16 ounce) package dry fettuccine pasta
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • In a large skillet over medium heat, swirl olive oil then swiftly toss in shrimp and garlic. Sauté until shrimp turns pink, about 3 to 4 minutes. Season with salt, basil, and paprika. Stir for another minute, leaving shrimp slightly underdone to cook further in the sauce.
  • Take out the shrimp mixture from the skillet, then add mushrooms to the same skillet. Cook and stir with salt until juicy, about 5 minutes. Add the shrimp, then quickly pour in half-and-half, mozzarella cheese, and Parmesan cheese. Bring to a boil, then reduce heat and simmer, stirring constantly until the cheese melts, for 5 to 8 minutes. Cover with a lid and remove from heat.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine until al dente, about 8 minutes. If cream sauce is too thick, thin out with pasta water. Drain pasta, rinse with cold water, and add to the cream sauce.
