Versatile shrimp pasta primavera; customize with your favorite veggies like bell pepper, mushroom, broccoli, or carrots.
Ingredients:
  • 0.5 (8 ounce) package spaghetti
  • 3 tablespoons olive oil
  • 0.25 cup chopped onions
  • 1 large clove garlic, minced
  • 0.33333334326744 cup sliced fresh mushrooms
  • 0.25 cup chopped red bell pepper
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 splash white wine
  • 1 pinch dried oregano
  • 0.5 cup heavy cream, or to taste
  • 3 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 pinch salt and ground black pepper to taste
  • 1 tablespoon freshly grated Parmesan cheese, or to taste
  • 1 tablespoon chopped fresh basil, or to taste
Instructions:
  • 1. Bring a large pot of salted water to a boil. Add spaghetti and cook for about 12 minutes until al dente. Drain.
  • In a skillet over medium heat, warm olive oil. Sauté onions until soft and translucent for about 5 minutes. Add garlic and sauté until fragrant for about 30 seconds. Incorporate mushrooms and bell pepper; cook until bell pepper softens and mushrooms lightly brown, approximately 3 to 5 minutes. Introduce shrimp, white wine, and oregano. Cook until shrimp are nearly cooked and turn pink, for 3 to 5 minutes.
  • Pour in the rich cream and velvety butter, and let the mixture simmer gently for 8 minutes, all while stirring continuously. Gently fold in the cooked spaghetti until fully coated, then turn off the heat. If the luxurious cream sauce is too runny, thicken it to perfection with a touch of flour. Season generously with salt and pepper, and finish off by sprinkling with grated Parmesan cheese and aromatic basil.
