Creamy Garlic Shrimp and Pasta

Impressive yet easy creamy shrimp pasta ready in just 10 minutes, perfect for unexpected guests or a cozy night in.
Ingredients:
  • 1 package (9 oz) refrigerated linguine
  • 1 lb uncooked large shrimp, peeled (tail shells removed), deveined
  • 1/4 cup dry white wine or Progresso™ reduced-sodium chicken broth
  • 1/3 cup reduced-fat garlic-and-herbs spreadable cheese (from 4-oz container)
  • 1/2 cup fat-free (skim) milk
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon salt
  • 4 1/2 teaspoons chopped fresh or 1 1/2 teaspoons dried oregano leaves
  • Fresh oregano sprigs, if desired
Instructions:
  • In a large Dutch oven, bring 3 quarts of water to a boil. Add linguine and shrimp. Cook for 3 to 4 minutes until the linguine is tender and shrimp turn pink. Drain the mixture and return it to the Dutch oven, covering it to keep warm.
  • In a large nonstick skillet, bring wine, cheese, milk, garlic, and salt to a boil over medium-high heat. Lower the heat and simmer for 2 minutes, stirring constantly until the mixture slightly thickens.
  • Toss linguine and shrimp in the savory sauce in the skillet until well coated. Right before serving, mix in fresh chopped oregano. Finish by garnishing with oregano sprigs.
