Lemon butter pasta with fresh shellfish - a holiday family favorite!
Ingredients:
  • 0.5 cup butter
  • 3 tablespoons minced garlic
  • 1.25 cups chopped fresh parsley
  • 2 tablespoons fresh lemon juice
  • 1 pinch crushed red pepper
  • salt and pepper to taste
  • 1 (16 ounce) package bow tie pasta
  • 2 (10 ounce) containers shucked small oysters, drained
  • 0.25 cup butter
  • 1 tablespoon olive oil
  • 1.25 pounds peeled and deveined small shrimp
  • 1 pound fresh lump crabmeat
  • 0.25 cup chopped fresh parsley
Instructions:
  • Combine 1/2 cup butter and 1/2 cup olive oil in a saucepan over medium heat until melted. Add garlic and cook until fragrant, about 3 minutes. Mix in 1 1/4 cups parsley and cook for another minute. Season with lemon juice, crushed red pepper, salt, and pepper. Set the sauce aside.
  • Bring a pot of salted water to a vigorous boil. Cook pasta until al dente, for about 8 to 10 minutes. Drain well.
  • While the water comes to a boil, add the oysters and let sit for 3 minutes after turning off the heat. Drain and set aside. In a large skillet over medium-high heat, melt butter and olive oil together, then add the shrimp. Cook until pink and starting to firm up. Finally, stir in the crab meat and oysters, cooking until the shrimp are opaque and the crab is heated through.
  • Combine the seafood and the drained pasta, then season with salt and pepper according to your taste. Add the sauce, gently toss to coat, and sprinkle with the remaining 1/4 cup of chopped parsley before serving.
