Make ahead sweet, tangy, spicy shrimp with prepped sauces.
Ingredients:
  • 4 cloves garlic, minced
  • 0.25 cup minced shallots
  • 1 tablespoon minced fresh ginger root
  • 3 tablespoons olive oil
  • 1 green bell pepper, seeded and chopped
  • 1.5 cups tomato - peeled, seeded and chopped
  • 2 teaspoons curry powder
  • 0.5 teaspoon whole allspice berries
  • 0.5 cup chicken stock
  • 0.25 cup brandy-based orange liqueur (such as Grand Marnier®)
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons cornstarch
  • 2 tablespoons chile paste
  • 8 ounces rotini pasta
  • 1.5 pounds medium shrimp - peeled and deveined
  • 0.5 cup fresh cilantro, chopped
Instructions:
  • Mix together garlic, shallots, ginger, and oil in one bowl. In a separate bowl, combine green pepper, tomato, curry powder, allspice, chicken stock, Grand Marnier, soy sauce, brown sugar, cornstarch, and chile paste. Cover and refrigerate until needed.
  • Boil a generous amount of salted water. Cook pasta until al dente, about 8 to 10 minutes. Drain well.
  • Preheat a large saute pan over high heat. Add the garlic-oil mixture once the pan is hot. Saute until the garlic starts to sizzle without browning. Stir in the tomato mixture and bring it to a rapid boil. Let it cook until it thickens, approximately 3 minutes.
  • Add the shrimp and sauté until they turn pink, approximately 2 minutes. Quickly mix in the pasta until fully coated and heated. Season to taste, focusing on adjusting salt levels.
  • Transfer the dish to a heated platter and garnish with fresh cilantro. Serve immediately.
