Curried Caribbean Pork Pasta

Delicious Caribbean-inspired curried pork pasta ready in just 35 minutes!
Ingredients:
  • 1 pound ground pork
  • 1 clove garlic, finely chopped
  • 1/2 cup mayonnaise or salad dressing
  • 1/2 cup plain yogurt
  • 1/4 cup frozen (thawed) orange juice concentrate
  • 2 1/2 teaspoons curry powder
  • 1 can (8 ounces) pineapple chunks in juice, drained and 2 tablespoons juice reserved
  • 4 medium green onions, sliced (1/4 cup)
  • 2 cups uncooked farfalle (bow-tie) pasta (4 ounces)
  • 1 small red bell pepper, cut into 1-inch pieces
  • 1 can (11 ounces) mandarin orange segments, drained
  • 1/4 cup coconut, toasted*
Instructions:
  • Sear pork and garlic in a 10-inch skillet over medium-high heat until pork is cooked through; drain any excess fat. Add in mayonnaise, yogurt, juice concentrate, curry powder, and reserved pineapple juice. Mix in pineapple and onions, and heat through while stirring frequently.
  • Cook pasta according to package instructions, adding bell pepper for the last 4 minutes. Combine the pasta, bell pepper, and pork mixture. Mix in orange segments and sprinkle with coconut before serving.
