Easy and delicious West Indian curried chicken, perfect with Caribbean peas and rice.
Ingredients:
  • 3 tablespoons vegetable oil
  • 1 (3 pound) chicken, cut into pieces
  • 1 large onion, diced
  • 6 cloves garlic, minced
  • 4 large potatoes - peeled and cubed
  • 2 tablespoons salt
  • 0.25 cup Jamaican curry powder
  • hot pepper sauce to taste
Instructions:
  • In a large pot over medium-high heat, sizzle the chicken, onions, and garlic until chicken browns, around 5 minutes. Mix in potatoes, salt, and curry powder; pour enough water to cover chicken halfway. Cook covered until tender, 30 to 40 minutes. Add hot pepper sauce to taste.
