Authentic West Indian-style Hard Do Bread: Simple, slightly sweet white bread like the one from local stores.
Ingredients:
  • 3 tablespoons white sugar
  • 1 (.25 ounce) package active dry yeast
  • 0.75 cup warm water (110 degrees F/45 degrees C)
  • 1 tablespoon vegetable oil
  • 1 tablespoon margarine, melted
  • 2.75 cups all-purpose flour
Instructions:
  • Combine the yeast and sugar in a small bowl with warm water. Allow it to sit until creamy, approximately 10 minutes.
  • Combine the yeast mixture, oil, margarine, salt, and 1 1/2 cups flour in a large bowl; stir well. Gradually mix in the remaining flour, 1/2 cup at a time, beating thoroughly after each addition. Once the dough comes together, knead it on a lightly floured surface until smooth and elastic, approximately 8 minutes. Oil a large bowl lightly, place the dough inside, and turn to coat. Cover with a damp cloth and allow it to rise in a warm spot until it doubles in size, roughly 1 hour.
  • Gently press down the dough and transfer it onto a lightly floured surface, shaping it into a loaf. Put the loaf into a lightly greased 9x5 inch loaf pan. Cover with a damp cloth and allow to rise for 15 minutes. Preheat your oven to 350 degrees F (175 degrees C) while the dough rises.
  • Bake at the right temperature until golden brown on top and the bottom sounds hollow when tapped. Let it cool in the pan for 5 minutes, then transfer to a rack to cool completely.
