Hard-boiled eggs, spices, olive and radishes

Enhance hard-boiled eggs with a flavorful exotic spice mix traditionally paired with creamy hamine eggs simmered with onion skins for hours.
Ingredients:
  • 40.00 ml cumin seeds
  • 40.00 ml coriander seeds
  • 2.50 gm ground cinnamon
  • 2 tsp dried mint
  • 50g pistachios, lightly roasted, finely crushed
  • 8 (50g each) eggs, hard-boiled for 6 minutes, peeled
  • Radishes, trimmed, to serve
  • Extra virgin olive oil, to serve
Instructions:
  • Toast the cumin and coriander seeds in a frying pan over medium heat until aromatic. Allow to cool, then grind using a mortar and pestle. Mix in the cinnamon, mint, pistachios, and 2 teaspoons of flaked sea salt.
  • Present a delightful spread of hard-boiled eggs and radishes alongside a tantalizing bowl of olive oil and spices for dipping.
