Sophie West's fusion Massaman curry combines Thai, Nonya, and Indian flavors for a quick and delicious weeknight meal.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, sliced
  • 115.50 gm rogan josh curry paste
  • 600g diced gravy beef
  • 2 medium potatoes, peeled, cut into 2cm pieces
  • 1 large carrot, peeled, cut into 1cm-thick slices
  • 255.00 gm beef stock
  • 270ml can Coconut Milk
  • 32.00 gm brown sugar
  • 24.40 gm fish sauce
  • 21.00 gm lime juice
  • Fresh coriander leaves, to serve
  • Roasted unsalted peanuts, to serve
  • Cooked brown rice, to serve
Instructions:
  • In a large frying pan, heat oil over medium heat. Add onion and cook until softened, about 5 minutes. Stir in curry paste and cook until fragrant, about 30 seconds. Add beef and cook until just browned. Transfer the mixture to the bowl of a 5.5-litre slow cooker.
  • Combine potato, carrot, stock, coconut milk, sugar, fish sauce, lime juice, and cinnamon stick in the slow cooker. Stir well and cover. Cook on low for 5 hours or until beef and vegetables are tender.
  • Remove and discard the aromatic cinnamon stick. Continue to cook uncovered for an additional 30 to 45 minutes, or until the sauce reaches the desired thickness.
  • Garnish with fresh coriander and crushed peanuts. Serve alongside fluffy rice.
