Make an easy and flavorful Indian beef curry in your slow cooker.
Ingredients:
  • 18.40 gm canola oil
  • 1kg diced lamb
  • 2 brown onions, peeled and roughly chopped
  • 1 tsp grated ginger
  • 2 cloves garlic, finely chopped
  • 28.00 gm curry paste (medium heat)
  • 400g can chopped tomatoes
  • Fresh coriander leaves, to serve
  • White rice, steamed, to serve
  • Pappadums, if desired, to serve
Instructions:
  • In a large non-stick frying pan over medium-high heat, heat 2 teaspoons of oil, then brown the lamb in batches, adding more oil if needed. Transfer the lamb to a slow cooker.
  • In a pan over medium heat, heat the remaining oil. Sauté the onion, ginger, and garlic with curry paste for 1 minute. Transfer this mixture to the slow cooker along with 1 1/2 cups of water and canned tomatoes. Cook on low for 1 1/2 hours. Serve with coriander, rice, and pappadums.
