Cozy up with delicious Indian-spiced lamb meatballs for a comforting night in.
Ingredients:
  • 500g lamb mince
  • 87.50 gm rogan josh curry paste
  • 62.50 ml chopped fresh coriander leaves
  • 125.00 ml fresh breadcrumbs
  • 1 egg, lightly beaten
  • 18.40 gm vegetable oil
  • 1 medium brown onion, halved, thinly sliced
  • 2 garlic cloves, crushed
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 127.50 gm chicken style liquid stock
  • 82.50 ml Greek Style Yoghurt
  • Steamed Basmati rice, to serve
  • Pappadums, to serve
  • Coriander leaves, to serve
Instructions:
  • In a mixing bowl, mix together mince, paste, 2 tablespoons coriander, breadcrumbs, and egg. Season the mixture with pepper. Shape level tablespoons of the mixture into balls and place them on a plate. Cover with plastic wrap and refrigerate for 20 minutes, if desired.
  • In a large frying pan over medium-high heat, heat oil. Brown meatballs by turning them for 5 minutes. Once browned, transfer meatballs to a large plate and cover to keep warm. Next, cook onion and garlic in the same pan for 5 minutes until softened. Stir in tomato and stock, and bring to a boil. Return meatballs to the pan, reduce heat to low, and cook for 10 minutes until meatballs are fully cooked.
  • In a bowl, mix together yoghurt and the rest of the coriander. Season with salt and pepper. Serve the meatball mixture with rice, the yoghurt mixture, and pappadums.
