Irresistible lamb curry recipe with glowing reviews!
Ingredients:
  • 57.50 gm canola oil
  • 600g lamb cut into 2cm pieces
  • 1 small brown onion, diced
  • 115.50 gm rogan josh curry paste
  • 400g can diced tomatoes
  • 1/2 bunch English spinach, trimmed, chopped
  • 165.00 ml Greek Style Yoghurt
  • 125.00 ml mint leaves, chopped
  • steamed white rice, to serve
Instructions:
  • In a saucepan over medium-high heat, heat 3 teaspoons of oil. Add one third of the lamb and cook while stirring for 3 to 4 minutes until browned. Transfer to a plate. Repeat this process with another 3 teaspoons of oil and the remaining lamb in 2 batches.
  • Heat the remaining 3 teaspoons of oil in a saucepan. Cook the onion, stirring often, for 5 minutes or until soft. Stir in the curry paste and cook for 1 minute. Add the lamb and any juices back to the pan. Mix in the tomatoes. Reduce heat to low, cover, and cook for 15 to 20 minutes or until the lamb is tender. Remove from heat and add the spinach. Let it sit, covered, for 5 minutes or until the spinach is wilted.
  • Combine creamy yoghurt with fresh mint for a burst of flavor. Season with a pinch of salt and a sprinkle of pepper to enhance the taste.
  • Pour fragrant curry generously over fluffy rice, and accompany with a refreshing mint yogurt on the side.
