Rogan josh Scotch eggs

Ingredients:
  • 5 large free-range eggs
  • 2 x 250 g packets of mixed cooked grains, ideally with punchy flavour
  • 2 heaped teaspoons rogan josh curry paste
  • 1 bunch of fresh mint (30g)
  • 50 g plain flour
  • 1 naan bread
  • 2 litres vegetable oil, for frying
  • mango chutney
Instructions:
  • Soft-boil 4 eggs for exactly 5 minutes in boiling salted water. Drain, cool under cold running water, and peel. In a food processor, combine the grains, curry paste, and mint leaves, pulsing until smooth and slightly tacky. If needed, add a splash of water. Divide the mixture into 4 balls. Flatten each ball on greaseproof paper to just under 1cm thick. Place a peeled egg in the center, mold the mixture around it to seal, then gently shape into a ball. Coat each egg first in flour, then beaten egg, and finally naan breadcrumbs. Chill until ready to cook. Heat oil in a pan to 170°C. Fry the Scotch eggs for 8 minutes until golden brown. Drain on paper towels, season lightly with sea salt, and serve with mango chutney. Delicious as a main dish with salad or as a starter.
