Creamy Leek and Cheese Penne Bake - A simple and satisfying weekday dinner option.
Ingredients:
  • 8 ounces penne pasta
  • 1 bunch leeks, quartered lengthwise and cut into 2-inch pieces
  • 1 cup heavy cream
  • 1.5 cups shredded Emmentaler cheese
Instructions:
  • Preheat your oven to a toasty 475 degrees F (245 degrees C), then generously grease a baking dish.
  • 1. Bring two pots of lightly salted water to a boil. Cook penne in one pot until al dente, about 11 minutes. In the other pot, blanch leeks for 2 minutes. Drain leeks thoroughly.
  • While gently heating the cream and butter in a saucepan until they are hot, smoothly blend in the Emmentaler cheese until it is fully melted. Finally, add a sprinkle of salt and pepper to taste.
  • After draining the penne, layer it with leeks in the baking dish. Finally, smother the mixture with the cheese sauce.
  • Bake until golden brown, approximately 10 minutes in the preheated oven.
