Colorful pesto chicken skillet with broccoli and tomatoes, a delicious and easy weeknight dinner.
Ingredients:
  • 6 ounces boneless, skinless chicken breast, thinly sliced
  • 0.5 teaspoon Italian seasoning
  • 1 pinch ground black pepper
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 3 cups chicken broth
  • 6 ounces gemelli pasta
  • 3 cups small broccoli florets
  • 1 cup grape tomatoes, halved
  • 0.5 cup shaved Parmesan cheese
  • 0.25 cup whipping cream
  • 0.25 cup fresh basil pesto
  • 0.25 teaspoon cayenne pepper
Instructions:
  • Coat chicken with a flavorful blend of Italian seasoning, salt, and pepper.
  • In a skillet over medium-high heat, melt butter. Add chicken and cook for 4 minutes, stirring occasionally. Stir in garlic and cook for 30 seconds until fragrant. Transfer chicken to a bowl and cover to keep warm.
  • Firstly, pour the chicken broth into the skillet along with the gemelli. Lower the heat to medium and cook for 8 minutes. Then, introduce the broccoli to the mix and continue cooking, occasionally stirring, until the broccoli is completely cooked, around 5 more minutes.
  • Cook tomatoes for 3 minutes, then mix in Parmesan cheese, whipping cream, and pesto until well combined. Add chicken back to the skillet and cook until heated through, about 3 minutes.
