Grill lemon chicken with a barbecue cover for quick, non-burnt perfection.
Ingredients:
  • 56.88 gm olive oil
  • 31.50 gm lemon juice
  • 375.00 ml firmly packed fresh basil leaves
  • 2 garlic cloves, chopped
  • 30.00 ml finely grated parmesan cheese
  • 30.00 ml pine nuts, toasted
  • 660g chicken drumstick
  • 970g chicken thigh
Instructions:
  • In a small jug, mix oil and lemon juice. Combine basil, garlic, parmesan, and nuts in a food processor. Blend until finely chopped. While the processor is on, slowly pour in the oil mixture until the pesto is nearly smooth. Season with salt and pepper.
  • Carefully separate the skin from each drumstick and thigh cutlet to create a pocket. Fill each pocket with a generous spoonful of pesto.
  • Preheat barbecue plate over medium-high heat. Grill chicken with the hood down, turning occasionally, for 10 to 12 minutes until fully cooked. Serve chicken with extra pesto and lemon wedges.
