Lemon-infused pesto rice pairs perfectly with fish or chicken as a flavorful side dish.
Ingredients:
  • 1 tablespoon butter
  • 1/2 cup finely chopped onion
  • 1 1/2 cup dry long grain white rice
  • 3 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (6- to 7-ounce) jar basil pesto
  • 1 teaspoon lemon zest
  • lemon wedges
Instructions:
  • Prepare all ingredients.
  • In a large saucepan over medium heat, melt butter and sauté onion for 4 minutes, stirring occasionally.
  • Add the rice and cook, stirring constantly for 1 minute until coated with butter and the onion is tender.
  • Pour in the water and season with salt and pepper. Raise the heat to medium-high and bring the mixture to a boil. Cover the pot and lower the heat to medium. Let it simmer for 15 minutes until the rice is tender and the liquid is absorbed. Allow it to stand, covered, for an additional 5 minutes.
  • Combine pesto and lemon zest gently until fully mixed. Serve with fresh lemon wedges.
