Delicious pesto salmon with rice salad, made effortlessly with just 5 ingredients for a quick and easy meal.
Ingredients:
  • 4 Skin-On Salmon Portions
  • 180g pesto
  • 2 x 250g pkts 7 Ancient Grain microwavable rice
  • 2 carrots, peeled, cut into long matchsticks
  • 200g snow peas, trimmed, thinly sliced lengthways
Instructions:
  • Preheat the grill to medium heat. Cover a baking tray with foil and lightly spray it with olive oil. Lay the salmon, skin-side down, on the foil. Spread 1 tablespoon of pesto on each piece of salmon. Grill for 5 minutes until the salmon is perfectly cooked.
  • While the rice is heating according to the packet directions, transfer it to a large heatproof bowl. Mix in the carrot, snow peas, and half of the remaining pesto. Toss everything together until well combined.
  • Divide the rice evenly among plates, top with salmon, and drizzle with remaining pesto before serving.
