Pesto Salmon

Effortlessly bake flavorful pesto salmon with sweet peppers and tomatoes in just 20 minutes using an oven bag.
Ingredients:
  • 1 Reynolds® Oven Bag, Large Size
  • 1 teaspoon salt (divided)
  • 1/2 teaspoon pepper (divided)
  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons prepared pesto
  • 1 cup grape tomatoes, cut in half
  • 1 yellow bell pepper, cut into rings
  • Fresh basil and lemon twist (optional)
Instructions:
  • Preheat your oven to 400°F, then line a 13x9x2-inch pan with a Reynolds® Oven Bag. Add flour, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and lemon juice into the bag. Gently squeeze the bag to mix the seasonings evenly.
  • Coat salmon with delicious pesto. Season the salmon with the remaining salt and pepper. Place the salmon in an oven bag in a single layer, then surround it with tomatoes and bell pepper strips.
  • Secure bag with nylon tie, make six 1/2-inch slits on top, and neatly tuck bag ends into pan.
  • Bake the salmon for 15 to 20 minutes until flakes easily with a fork. Allow it to rest for 5 minutes before carefully opening the bag to serve. If desired, top with fresh basil and a lemon twist for garnish.
