Delicious copycat pesto chicken quinoa bowl with feta, tomatoes, and lemon dressing.
Ingredients:
  • 2 cups chicken stock
  • 1 cup quinoa, rinsed
  • 1 lemon, zested and juiced
  • 3 tablespoons olive oil
  • 1 teaspoon freshly cracked black pepper
  • 2 cups finely chopped cooked chicken
  • 1.5 cups water
  • 1 (14 ounce) can diced tomatoes, drained
  • 1 (4 ounce) package crumbled feta cheese
  • 0.5 cup half-and-half
  • 0.5 cup shredded carrots
  • 1 tablespoon pesto sauce
  • 1 teaspoon dried oregano
Instructions:
  • In a large pot, bring chicken stock and quinoa to a boil over high heat. Cover, reduce heat to low, and simmer for about 15 minutes until quinoa is tender. Remove from heat and let it stand covered for another 5 minutes before fluffing with a fork.
  • Prepare a tantalizing lemon dressing by combining fresh lemon zest, zesty lemon juice, high-quality olive oil, a sprinkle of pepper, and a pinch of salt in a small bowl.
  • Create a luscious mixture by combining lemon dressing, chicken, water, diced tomatoes, feta cheese, half-and-half, carrots, pesto sauce, and oregano with cooked quinoa. Cook on medium heat, stirring occasionally, until luxuriously thick and creamy, approximately 15 minutes. Serve in individual bowls for a delightful meal.
