Copycat Philadelphia Strawberry Cheesecake Bites

Make your own irresistible Philadelphia strawberry cheesecake bites at home with this delicious copycat recipe.
Ingredients:
  • 1 Graham Cracker Crust Recipe (see below)
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 1 cup heavy whipping cream
  • ¼ cup strawberry jelly
  • ¼ cup white chocolate candy melts
Instructions:
  • Combine graham cracker crumbs, butter, and sugar in a bowl until evenly mixed and crumbly.
  • Press 1 tablespoon of graham cracker crust into each well of two 12-well silicone ice cube trays. Flatten the mixture evenly at the bottom of each well using a wooden spoon or rubber spatula handle. Freeze trays as you make the filling.
  • Using an electric mixer, blend cream cheese, powdered sugar, vanilla extract, and salt in a large bowl until smooth and well mixed.
  • In a chilled glass or metal bowl, use an electric mixer to beat cold cream until stiff peaks form in about 2 to 3 minutes. Then, gently fold the whipped cream into the cream cheese mixture until smooth.
  • Take out the ice cube trays from the freezer. Fill each well with the cream cheese mixture up to the top, using about 2 tablespoons. Use a rubber spatula to level and smoothen the tops. Freeze until solid, approximately 1.5 hours.
  • Remove each mini cheesecake from the wells by gently pushing from the bottom. Use a small spoon to scoop out about 1 teaspoon of filling from the center of each bite.
  • Transfer strawberry jelly to a small plastic bag or piping bag, then snip a small corner to create an opening. Gently squeeze the strawberry filling into the vertical wells on each bite.
  • Melt the white chocolate in intervals until smooth. Drizzle the melted white chocolate in stripes across the bars using a spoon. Chill in the fridge for 10 minutes to set. Serve chilled.
